Anything with pineapple or coconut is a great choice.
My best friend had pineapple meatballs at her wedding reception (hawaiian style wedding) and they were wonderful!
Links to a couple of recipes online since I don't have her recipe.

The nice thing... you can cook them in your crockpot, too, and keep from heating up your house. They are excellent appetizers for a cookout, or they can be a main dish.
Freeze pieces of fruit in ice cubes for cute drinks, start the week before and bag once frozen to get a bunch of them ready.
Fresh fruit, veggie platter.
Pineapple salsa and chips.
Fruit kabobs in leu of platter.
Heres a pic of how to set up the food table, forget the candleabras in the pic, but use this idea to really set the decor up. Its simply green leaf onthe platters, and use fresh flowers and greenery between dishes. If you put a few boxes on the table, then the table cloth you get height which gives the food display deminsion
Well you can always roast a Pig that would make it authentic. (LOL)
Bu you can Make shish kabobs to star guest off they cook quick and you can add pieces of yellow, red and green peppers in between the pieces of meat to look colorful and tropical. You can also make Shrimp Shish kabobs or make coconut shrimp. You can buy the smaller pineapples and cut the top off and scrape out the inside and use it for a fruit salad and use the pineapple as cup to make frozen drinks and pour them in since coconuts are harder to break open. You can also make a great mango salsa to put over some food. You can also cut watermelon slices and pour some honey mixed with mint and a little lemon and garnish them with mint leaves. maybe you can smoke some salmon fish is always tropical. Hope this helps

You should make some West Indian food that you would find on the islands. Maybe some stew chicken, jerk chicken, beef and chicken patties (made w/ curry), ox tail, rice and peas and beans, cabbage, fish, baked mac and cheese, fresh fruits, etc. The food is sooooo good and if your guests have never had food like this it will give them a new experience!

There are plenty of websites with these recipes. Try googling it by typing in Jamaican recipes or Trinidad and Tobago recipes.

Good luck!
